Looking through some recipe i've encountered 10 different potato bread recipes and must confess to my shame that I hadn't baked one previously. What i could get from the recipes is, that potatoes in the dough contribute to freshness and a juicy crumb. For an upcoming hike actually just right...

I was looking for a pão alentejano recipe for a long time and now i was successful. Since i came back from a holiday at the Algarve / Alentejo in Portugal, i was trying to find a recipe of the wonderful country bread i have eaten there. As with all traditional recipes, there are a wide variety of different versions. Out of my memories i tried to guess taste, color and composition more or less. By accident I have found at Björn's blog (der brotdoc) a recipe, which corresponded exactly to what I had imagined for the pão alentejano. Björn calls it a Mediterranean country bread and he is right. I had prepared myself for a long series of tests but to my surprise the first attempt was already an absolute hit ...

Again a 100% whole-grain bread (100% rye wholemeal) and i guess one of the best i ever made: wonderfully juicy, rich in flavor with an elegant acidity and an extremely loose crumb: Organic rye wholemeal bread with mashed apples. At first I was skeptical of using mashed apples, but according to statements of many bakers on the benefits in terms of crumb and balancing of acid I now gave it a try - and it was worth to do so. The home made mashed apples from organic apples contributes in fact to a juicy crumb in and balances the acid and contributes to a balanced flavor. There has been some attempts needed until I was satisfied with the result, but now it is definitely one of my favorites. I could at least not yet determine how long the bread keeps fresh because it just does not last as long ...
